It’s that time of year when Halloween treats prevail. Recently, Piedmont Delivery Service learned of a company that specializes in a cooking method developed by culinary scientists. Sous vide is a cooking method in which food is sealed and cooked in water at precise times and temperatures. The French term for “under vacuum” means, for example, egg bites from Starbucks to seared beef short ribs are doled out to 30,000 restaurants by the company Cuisine Solutions. Bernard Milburn needed some parts to keep the food scientists happy at their facility in Sterling, Virginia. On a Friday evening, Piedmont Delivery Service dropped off the parts at 8:43pm.
